- In a large pan, heat the oil and add onion.
- When the onion becomes translucent, add the eggplant and let cook for 3-4 minutes.
- Add the zucchini and peppers. Let cook another 5 to 7 minutes.
- Pour in the marinara sauce and let simmer for 5 to 7 minutes until tender.
- Season with salt and freshly ground pepper and add a few fresh basil leaves.
