Classic sugar shack dishes have a definite party brunch vibe. And we love it! To play up the occasion in the most delicious way, we came up with these pillowy buttermilk waffles. Just the thing to make the best of the king of weekend meals. And as if that wasn’t enough, these waffles come with the perfect garnish—a compound butter both silky smooth and crunchy, made with our chocolaty spread and roasted hazelnuts. Dessert for breakfast? Yes please!

FOR THE HAZELNUT-COCOA MAPLE BUTTER

  1. In a saucepan, stir together syrup, sugar, 1 cup of butter and the same amount of water, over medium heat, until melted and creamy.
  2. Continue to gently boil, without stirring, until the mixture is golden brown or that the thermometer reads 300°F.
  3. Immediately stir in hazelnuts and carefully pour hot mixture onto a parchment-lined baking sheet. Spread out into a thin layer using a spatula or wooden spoon.
  4. Cool completely, about 20 minutes.
  5. Break into small pieces.
  6. In a bowl, add the remaining cup of softened butter. Fold in the small pieces of brittle and the hazelnut cocoa spread until well combined.

FOR THE WAFFLES

  1. In a large bowl, whisk together the flour, baking powder, sugar, baking soda and salt.
  2. In a medium bowl, whisk buttermilk, butter and eggs. Then, whisk into the dry mixture until combined.
  3. Let rest at room temperature for 15 minutes.
  4. In the meantime, preheat a waffle maker.
  5. Cook the waffles by following the instructions of the waffle maker.
  6. Serve the freshly cooked waffles topped with the hazelnut-cocoa maple butter and indulge.
