FOR THE HAZELNUT-COCOA MAPLE BUTTER
- In a saucepan, stir together syrup, sugar, 1 cup of butter and the same amount of water, over medium heat, until melted and creamy.
- Continue to gently boil, without stirring, until the mixture is golden brown or that the thermometer reads 300°F.
- Immediately stir in hazelnuts and carefully pour hot mixture onto a parchment-lined baking sheet. Spread out into a thin layer using a spatula or wooden spoon.
- Cool completely, about 20 minutes.
- Break into small pieces.
- In a bowl, add the remaining cup of softened butter. Fold in the small pieces of brittle and the hazelnut cocoa spread until well combined.
FOR THE WAFFLES
- In a large bowl, whisk together the flour, baking powder, sugar, baking soda and salt.
- In a medium bowl, whisk buttermilk, butter and eggs. Then, whisk into the dry mixture until combined.
- Let rest at room temperature for 15 minutes.
- In the meantime, preheat a waffle maker.
- Cook the waffles by following the instructions of the waffle maker.
- Serve the freshly cooked waffles topped with the hazelnut-cocoa maple butter and indulge.
