Sicilian-Style Roasted Cauliflower

For the cauliflower
For the remoulade sauce
Preparation
- Preheat the oven to 400°F.
- In a bowl, combine cauliflower, 3 tbsp of olive oil and salt and pepper to taste.
- Place the cauliflower on a parchment lined baking sheet. Roast in the oven for 25 minutes.
- In the meantime, in a bowl, whisk together the lemon and orange juices and zests, chili flakes, cumin, maple syrup and garlic. Whisk in the olive oil and season with salt and pepper. Set aside.
- Once the cauliflower is roasted, transfer to a bowl. Add the pine nuts, capers, vinaigrette, raisins and parsley. Toss well.
- To make the remoulade: add all ingredients to a small bowl. Mix well to combine.
- To serve, spread the remoulade sauce on a platter and top with roasted cauliflower. Buon appetito!
