What would a BBQ or a picnic be without potato salad? Especially when the good-old spud gets such a colourful, delightful Sicilian treatment! This salad inspired by the flagship flavours of Southern Italy is also known as insalata vastasa alla palermitana—a bit of a mouthful, right? It’s a staple in its hometown of Palermo, but its delicious simplicity has won the hearts of many, including ours! So, head to the garden or the market and fill up on classic summer produce. This insalata will not disappoint!

The potatoes and green beans can be boiled the day before assembly.

  1. Bring a large pot of salted water to a boil.
  2. Boil the whole, unpeeled potatoes for 15 to 20 minutes, or just until fork tender.
  3. While the potatoes cook, let the thin slices of red onion sit in cold water for 5 minutes.
  4. Using a slotted spoon, remove the potatoes from the boiling water and let them cool on a clean kitchen towel. Save the cooking water for the green beans.
  5. Boil the string beans for 5 to 7 minutes. Drain and let cool, about 10 minutes.
  6. Meanwhile, peel and chop the cooked potatoes into cubes.
  7. Drain the onions and press out any remaining water with a paper towel.
  8. In a large bowl, combine the cooked vegetables with all the other ingredients. Season with salt and pepper to taste. Toss and serve cold or room temperature. Buon appetito!
