Sicilian potato salad

The potatoes and green beans can be boiled the day before assembly.

- Bring a large pot of salted water to a boil.
- Boil the whole, unpeeled potatoes for 15 to 20 minutes, or just until fork tender.
- While the potatoes cook, let the thin slices of red onion sit in cold water for 5 minutes.
- Using a slotted spoon, remove the potatoes from the boiling water and let them cool on a clean kitchen towel. Save the cooking water for the green beans.
- Boil the string beans for 5 to 7 minutes. Drain and let cool, about 10 minutes.
- Meanwhile, peel and chop the cooked potatoes into cubes.
- Drain the onions and press out any remaining water with a paper towel.
- In a large bowl, combine the cooked vegetables with all the other ingredients. Season with salt and pepper to taste. Toss and serve cold or room temperature. Buon appetito!
