PEPERONATA WITH SAUSAGES

PEPERONATA WITH SAUSAGES

Do like the southern Italians do in late summer and eat peperonata. Like a ratatouille, serve it as a starter with crostini, as a main course or on a pizza. One thing is for sure: peppers are the star of this dish!

  1.  In a non-stick frying pan, heat olive oil over medium heat. 
  2.  Add onion and garlic. Cook while stirring regularly to avoid browning the onion and garlic. 
  3. Add bell peppers, oregano, salt, pepper and chili flakes, cook for 15 minutes over low heat, partially covered and stirring regularly. 
  4. Add the jar of Stefano pizza sauce and the crumbled sausage. Cook over medium low heat, for 10-12 minutes stirring occasionally.  
  5.  Remove from heat and add basil. Season to taste with salt and pepper. 
  6.  For maximum flavour, let rest 5 minutes before serving. 
  7.  Keep in refrigerator.
