- In a medium-sized saucepan, combine the cream, sugar, and vanilla. Bring to a simmer over medium heat. Turn off the heat and set aside.
- Meanwhile, pour the water into a small bowl and sprinkle the powdered gelatin on top. Let the gelatin bloom for 5 minutes.
- Bring the cream mixture back to a simmer over medium-high heat. Incorporate the set gelatin and mix until fully dissolved.
- Divide the cream mixture equally into 8 ramekins or mason jars (125 ml or ½ cup each). Cover and refrigerate until set, 4 hours to overnight.
- To serve, top with the berries and add a drizzle of vinegar and olive oil.
