- Adjust the oven rack to the middle position and preheat at 425°F.
- In a large bowl, combine the Brussels sprouts with 2 tbsp of olive oil, maple syrup, salt and pepper to taste.
- Place the Brussels sprouts on a parchment lined baking sheet and roast in the oven for 15 minutes, until tender.
- Meanwhile, in a large oven-safe non-stick frying pan, heat the remaining oil over medium heat. Add the shallots and cook for 5-6 minutes.
- In the meantime, in a large bowl, whisk the eggs. Add the cheese and chives.
- Pour the egg mixture over the shallots. Scatter the roasted Brussels sprouts over the egg mixture and bake in the oven for 15-20 minutes, until set.
- Cut the frittata into wedges and serve.
