Preparation
- Preheat the oven to 425F.
- In a large bowl, mix the potatoes with the olive oil. Season with salt and black pepper, to taste.
- Place the potatoes on a parchment-lined baking sheet and roast in the oven for 25 minutes, flipping once, halfway through. Once the potatoes are fork tender, remove and set aside.
- For the vinaigrette: in a large bowl, combine the vinaigrette ingredients with salt and black pepper to taste. Whisk well.
- Add the potatoes, kale, sliced apples and cheese curds to the bowl with the vinaigrette. Season with salt and black pepper, to taste. Toss until well combined.
- Transfer to plates or platter, top with toasted hazelnuts. Serve.
