Preparation
- Heat a grill to medium-medium high heat.
- In a large bowl, add the vegetables and olive oil. Toss to coat.
- Grill the vegetables, about 5 minutes per side, until tender.
- Remove vegetables from the grill and cut into bite-size pieces.
- For the vinaigrette, in a medium bowl, whisk together all the ingredients. Season with salt and pepper to taste.
- In a large bowl, add the grilled vegetables, cooked quinoa, herbs and vinaigrette. Toss well.
- Refrigerate for a minimum of 2 hours and serve.
