FARFALLE PASTA SALAD

A perfect summer pasta salad that celebrates the season's vegetables. Colourful, full of vegetables, super simple to make, it can be eaten cold or at room temperature, and is easy to take along for picnics or lunches. Can be kept for 2-3 days in the fridge.

  1. Bring a large pot of water to a boil for the pasta. Salt the water and cook the pasta according to the instructions on the package. Once cooked, drain the pasta and add it to a large serving bowl.
  2. Meanwhile, in a small mixing bowl whisk together all the ingredients for the vinaigrette.
  3. To the pasta mixing bowl, add all the vegetables and the crumbled feta cheese.
  4. Pour the vinaigrette on top and mix until well combined. Serve.
