This one goes out to all the grilling fans out there! Not to oversell, but we really think you’ll agree that these perfectly golden skewers are the epitome of scrumptious simplicity. Traditionally found in the criminally overlooked Abruzzo region of Italy, arrosticini are a local food celebrity of sorts. During the summer, they’re found all over restaurants and backyards and their smell fills the air with the promise of an undeniably good bite. These grilled delights are usually cooked on a special charcoal grill called furnacella, but unless you’re up for a DIY BBQ project, you can very well turn to your trusty BBQ or grilling pan for this recipe.

Plan an additional 2 to 4 hours for marinating the meat. If using a BBQ, make sure the meat does not directly touch the flame to avoid burning. Turn on only one side of the grill (medium-high heat) and move the arrosticini around as needed throughout the cooking process.

  1. Soak a handful (about a dozen) of wooden or bamboo skewers in water for about 30 minutes.
  2. Chop the meat into ½-inch cubes.
  3. In a large bowl, marinate the meat with the extra virgin olive oil, lemon zest, garlic, rosemary, and white wine. Salt and pepper to taste. Mix well and cover. Refrigerate for 2 to 4 hours.
  4. Thread the meat cubes onto the skewers, packing them tightly, and ensuring an even distribution between fat and meat.
  5. Heat a grill pan or BBQ to medium-high heat.
  6. Cook the skewers for 1 to 2 minutes on each side or until a light, golden crust has formed.
  7. Once cooked through, remove from the heat and serve immediately. Buon appetito!
