Maple glazed carrots

175 ml (¾ cup) vegetable broth

2 bunches of carrots with tops, peeled (about 20 carrots)

salt and pepper to taste

15 ml (1 tbsp.) butter

30 ml (2 tbsp.) maple syrup

fresh chives, chopped, add to taste


  1. In a large, deep skillet over high heat, bring the broth and carrots to a boil. Pepper to taste. Reduce heat and simmer carrots until tender and liquid has evaporated, 10 to 12 minutes.

  2. Add the butter and maple syrup, stir and cook until the carrots are glazed, 7 or 8 minutes. Season with salt and pepper as needed.

  3. Garnish with chopped chives and serve.
