LINGUINE WITH SAUSAGE MEATBALLS

This one's for the kids! Take out their little aprons and let them make the meatballs. Not only is it not very messy, but they'll feel that they have helped in a big way. Who knows, maybe they'll develop a passion for cooking...

Preparation

  1. Roll the sausage meat into 8 to 10 small meatballs.
  2. In a large frying pan, heat the olive oil over medium-high heat.
  3. Cook the meatballs, turning them over every couple of minutes until they are cooked through, browned, and crispy (about 8 minutes).
  4. Bring a large pot of salted water to a boil. Cook the pasta according to the instructions on the package. Before draining, reserve about ½ cup of the starchy cooking water.
  5. In another pot, heat the sauce. Once simmering, add the meatballs.
  6. Return the drained pasta to the pot. Ladle in some sauce and toss to coat well.
  7. Top with more sauce, meatballs, and Parmesan before serving.
