This is an all-purpose vinaigrette. Simple but vibrante. Can be kept in the fridge for 5 to 7 days. Perfect on any salade but also as a marinade for chicken or fish. So it's a good idea to make doubles or triples so you're ready for any eventuality and quick dinners will be a breeze!

1 head of garlic

625 ml (2 ½ cups) Stefano extra virgin olive oil + extra for drizzling garlic

250 ml (1 cup) fresh lemon juice

95 ml (⅓ cup + 1 tbsp) Stefano white wine vinegar condiment

Salt and freshly ground black pepper to taste
