FOR THE CAKE
- Preheat the oven to 350°F.
- Grease and flour a 10-inch removable-bottom pan or a pie plate.
- In a bowl, over a saucepan of simmering water, melt the chocolate and the butter over low heat. Add the coffee and mix well. Set aside.
- In a different bowl, mix the ground almonds and the baking powder. Set aside.
- Place the sugar and eggs in a large bowl. With an electric mixer, whisk on medium speed for 5 minutes, or until the sugar has dissolved and the mixture is creamy and light in colour.
- Incorporate the dry ingredients.
- Delicately fold in the reserved chocolate mixture to incorporate.
- Pour the cake mixture into the prepared pan.
- Cook in the preheated oven for 45 minutes and let cool on a baking rack. The cake will set as it cools.
- Before serving, dust the cake with powdered sugar.
FOR THE RICOTTA GARNISH
- Place all the ingredients in a bowl and mix thoroughly with a spoon. Garnish the cake with a dollop of ricotta cream and serve.
