- In a large frying pan, heat olive oil over medium heat. Add the onions and cook until translucent, about 3-5 minutes.
- Add the peppers and cover while cooking.
- In the meantime, fill a large bowl with water and ice. Set aside.
- Bring a large pot of water to boil. Cut an X on the bottom of each tomato. Place the tomatoes into the boiling water and cook until skins begin to peel off, about 20-30 seconds.
- Transfer tomatoes to the bowl of ice water and allow to cool for 1-2 minutes.
- When cool enough to handle, peel the skin off each tomato. Cut each tomato in half and remove the pulp and seeds. Cut tomatoes into thin strips.
- Add the tomatoes to the vegetables and cook covered for about 1 hour, stirring occasionally.
- Once cooked, stir in the white wine vinegar condiment.
- Serve with grilled sausages, chicken, fish or add in a quinoa salad. Buon appetito!
