ELENA’S SIMPLE TOMATO SAUCE

- With a knife, score an X at the bottom of each tomato.
- Blanch the tomatoes in a pot with boiling water for 1 minute. Using a slotted spoon, remove the tomatoes from the boiling water and place in an ice bath to stop the cooking process.
- Once cool enough to handle, remove the tomato skins, cores and seeds. Dice the tomatoes and set aside.
- Heat 3 tbsp (45 ml) of Stefano extra-virgin olive oil in a pot on medium-low heat.
- Add the garlic cloves to the pot and cook until slightly browned (be careful not to burn them).
- Add the tomatoes and continue cooking for 10 to 15 minutes.
- Add the whole basil leaves.
- Continue cooking, stirring for 5 minutes.
- Using a fork, mash the garlic in the pot.
- Add salt to taste and another 3 tbsp (45 ml) of olive oil.
- Sprinkle with Parmesan and serve.
