ELENA’S SIMPLE TOMATO SAUCE

My mom is proud to share her classic tomato sauce recipe, after all: that's what cooking's for! It has been passed down from generation to generation — I literally grew up with this sauce — and now we're passing it on to you. Use this basic tomato sauce as the foundation to many Italian dishes.

If using canned tomatoes, begin at step 4.

  1. With a knife, score an X at the bottom of each tomato.
  2. Blanch the tomatoes in a pot with boiling water for 1 minute. Using a slotted spoon, remove the tomatoes from the boiling water and place in an ice bath to stop the cooking process.
  3. Once cool enough to handle, remove the tomato skins, cores and seeds. Dice the tomatoes and set aside.
  4. Heat 3 tbsp (45 ml) of Stefano extra-virgin olive oil in a pot on medium-low heat.
  5. Add the garlic cloves to the pot and cook until slightly browned (be careful not to burn them).
  6. Add the tomatoes and continue cooking for 10 to 15 minutes.
  7. Add the whole basil leaves.
  8. Continue cooking, stirring for 5 minutes.
  9. Using a fork, mash the garlic in the pot.
  10. Add salt to taste and another 3 tbsp (45 ml) of olive oil.
  11. Sprinkle with Parmesan and serve.
