For the vinaigrette:

- Preheat the oven to 325 °F (163 °C). Toss bread cubes with the olive oil and transfer to a baking sheet. Bake in oven for 10–15 minutes, until golden brown. Remove from the oven and let cool.
- In a small bowl, whisk together the ingredients for the vinaigrette.
- In a large bowl, combine toasted bread, tomatoes, cucumbers, onions, olives and basil leaves.
- Add the vinaigrette to the large bowl and toss all ingredients together. Season with salt and pepper to taste. Serve and enjoy!.
