Marinated Olives

Plan 3 hours for the infusion of the oil and the marinade. Yields about 2 500 ml Mason jars.

- In a small pot, mix the olive oil, garlic, coriander, bay leaves, and hot pepper. Cook over low heat for about 20 minutes, or until the aromas are strong and the garlic is just golden.
- Remove from the heat and set aside to infuse 1 hour.
- Place the olives and the orange zest in 2 Mason jars , leaving a bit of space at the top. Pour the infused oil over the olives and mix well to coat. Close the lids.
- Marinate at room temperature 2 hours before serving or keep in the refrigerator for up to 4 days (allow olives to get back to room temperature before serving).
