Giardiniera is an essential condiment in most Italian kitchens. A bit like the Mediterranean cousin of relish or chunky homemade ketchup, this flavour enhancer does wonders for cold cuts and pâtés, as well as sandwiches of all shapes and forms. You wouldn’t believe what a little spoonful of pickled vegetables can do for a dish! Using an array of veggies not only screams “end of summer harvest,” it also makes for a balanced rainbow of textures, colours, and flavours.

Traditionally, giardiniera highlights carrots, cauliflower, celery, and peppers. However, you could very well tweak it to use your favourite garden goodies such as green beans, cucumbers or turnips. Same goes for the spiciness level: feel free to adjust the amount of hot peppers to your tastebuds’ liking and temerity. Oh, and for this simplified version of the celebrated pickle medley, you won’t have to sterilize your Mason jars—an easy fridge staple you’ll want to make again and again!

Makes 2 Mason jars of 500 ml (2 cups) each. Plan for 24 hours of refrigeration. Note that the giardiniera can be kept in the refrigerator for up to 1 month and that it becomes even more flavourful with time. Once open, consume within a 7 to 10 days.

  1. In a non-reactive bowl (inox or glass), combine the water, vinegar, and sea salt. Mix thoroughly until the salt is fully dissolved.
  2. Add the carrots, cauliflower, hot peppers, garlic, celery, and bell pepper. Mix well. Cover and refrigerate for 8 hours or overnight.
  3. Drain and rinse the vegetables under running water.
  4. In a clean bowl, combine the oil, oregano, and black pepper. Add the prepared vegetables and mix well. Place the bowl in the refrigerator and marinate for at least 8 hours or up to 2 days.
  5. Transfer the giardiniera into Mason jars.
