Plan an additional 2 to 4 hours for marinating the meat. If using a BBQ, make sure the meat does not directly touch the flame to avoid burning. Turn on only one side of the grill (medium-high heat) and move the arrosticini around as needed throughout the cooking process.

- Soak a handful (about a dozen) of wooden or bamboo skewers in water for about 30 minutes.
- Chop the meat into ½-inch cubes.
- In a large bowl, marinate the meat with the extra virgin olive oil, lemon zest, garlic, rosemary, and white wine. Salt and pepper to taste. Mix well and cover. Refrigerate for 2 to 4 hours.
- Thread the meat cubes onto the skewers, packing them tightly, and ensuring an even distribution between fat and meat.
- Heat a grill pan or BBQ to medium-high heat.
- Cook the skewers for 1 to 2 minutes on each side or until a light, golden crust has formed.
- Once cooked through, remove from the heat and serve immediately. Buon appetito!
